Try these Crab Stuffed Chicken Breasts using your left over crab legs.
During crabbing season and cooking for a large group, it's easy to get carried away and cook more than you needed. Use your left over crab meat for this fresh new dish.
Even if all you have is about 4 ounces of left over crab meat, keep in mind that's about equivalent to a can of crab meat, which is perfect to use for a dinner for two. (And, of course, if you don't have any left over crab legs, you can certainly use a can of crab meat for this recipe.)
Start with cutting a couple of chicken breasts down the middle, but not all the way through.
Then, mix up your favorite crab cake mix. Good ol' fashioned Dungeness Crab Cakes is one of our absolute fave's, so we used that recipe for this dish this time.
Spread the stuffing inside the breasts and fold them back over. Place them in a small cooking dish sprayed with cooking spray, or, you can use a little olive oil.
Cover with tin foil, then, place them in a preheated oven at 350 degrees for 45 minutes.
After 45 minutes, spread your favorite sauce, bar-b-que, or, spicy peanut sauce over the breasts and cook uncovered for another 15 minutes.
Add some veggies and/or a side salad or fruit....
There's an easy crab stuffed chicken dinner for two. You can use this same method for crab meat left over's for stuffing salmon, halibut or even lobster as well.
