Crab N Cream Cheese Egg Rolls
Found this Crab N Cream Cheese Egg Rolls recipe on a package of Azumaya square wraps. Think you may like to try this for a special get together. Makes quite a few servings of crab appetizers!
Ingredients:
- 4 oz.-Dungeness or lump crab meat
- 2 oz.-Cream Cheese
- 1/4 tsp.-Grated Lemon Zest
- 1/2 tsp.-Lemon Juice
- 1/4 tsp.-Kosher Salt-to taste
- 1/8 tsp.-Ground Black Pepper
- 3 tsp.-Chopped Chives
- 1 Package-Azumaya Square Wraps
- Vegetable Oil-for deep-frying
Directions:Egg Wash -1 large Egg whisked with 2 Tablespoons of water and set aside.
Combine the crab, cream cheese, lemon zest and juice, salt, pepper, and chives together. Place a heaping half-tsp. of filing on one corner of a wrap. Moisten the edges with the egg wash.
Bring one set of opposite corners together and seal all the edges, making a triangle. Next, bring the long ends of the triangle together, overlapping the corners slightly and sealing with more off the egg wash.
Turn the third corner up if it isn't already forming a small tortellini or hat-shape. Heat the oil to 350 degrees. Fry the eggs rolls until they are golden brown, about 45 seconds to 1 minute. Drain on paper towels.
